There are mainly three types of sesame seeds produced in India - white, black and brown. Natural white sesame seed is the most traded and used for crushing and direct consumption. It has its various uses in bakery, confectionery, sesame products like tahini and many other food items. Indian sub-continent mainly crushes it to produce unrefined and filtered oil while East and Southeast asian countries consume toasted oil. In Middle East it is mainly used in the production of tahini (halwa). Brown seeds are also used for oil extraction purpose whereas black sesame seeds are for medicinal purpose as they are known to have many health benefits. When the seeds are crushed to produce oil, its by-product sesame extraction is also produced. Sesame seed extraction / meal is a high protein ( 45-47%) feed meal being used as a valuable ingredient in poultry feed. Hulled sesame seeds which are widely used in bakery and confectionery industry are derived by removing the outer skin of natural seeds through the process called hulling. It has two types depending upon its drying process - Autodried and Sundried. Developed countries prefer auto while developing nations buy sundried which is more reasonable.

Sesame Seed Exports

India's main export is of mainly below type:
Natural White Sesame Seed: 99/1/99.90%., 99/1/1, 98/2/2, 95/5/2
Hulled Sesame Seed: AutoHulled and Sundriedhulled - 99.5%-99.98%.

China, Taiwan, Korea, U.S., Europe, Middle East and Australia are the major destinations for Indian sesame seeds. Russia is a big buyer of Sundried hulled variety. In the year 2007-08, India exported sesame of value more than ninty million dollars to various countries with China being the biggest buyer.

The prices of sesame seeds are highly volatile and can swing to great extent in a day. The information regarding its crop size in different parts of the world is not easily available and thats why the crop estimates keep on changing. This information gap gives opportunities to big stockists to dictate the sesame movement to their advantage. Also there is no futures platform for sesame seed in India, so exporters and traders cannot hedge their price risk and are prone to the sudden fluctuations.

Mechanically Hulled Sesame Seeds are considered as the most nutritious seeds because of its protein and valuable Minerals.

The husk hull (skin) of these seeds are removed hence are called as Hulled Sesame Seeds.

Prior to hulling process, these sesame seeds are thoroughly cleaned. Hulled Sesame Seeds are relatively softer and delicious as compared to Natural Sesame Seeds.

Introduction

Sesame (ses´eme) is the dried, oval-shaped seed of the herb Sesamum indicum. Also known as Til, bennes and gingelly, it is an important oilseed crop.Africa is considered to be the primary centre of origin of this crop.India and Japan are considered as secondary centres of origin.

Sesame seed is an important ingredient in culinary traditions of many countries, especially the countries in West Asia. Sesame seed carry 55% of oil content. Sesame oil is used for cooking, cosmetics, paints and lubricants. The byproduct obtained after extracting oil is used as feed for livestock.

Global output of sesame seed is estimated at around 3 million ton per year with India and China dominating production. Global sesame output occurs mainly around few countries in Asia and Africa. Global sesame seed trade is estimated 500,000-600,000 ton per year.

India accounts for nearly 30% of global output and plays an important role in global sesame business. Mainly cultivated in Maharashtra, Rajasthan, Gujarat, Madhya Pradesh, Karnataka, Orissa and West Bengal, sesame seeds come in three varieties in the country -- yellowish, red and black seeds.

The eastern region comprising West Bengal, Orissa, Assam and Andhra Pradesh mostly produce red and black variety sesame which is inferior to the white sesame grown in Maharashtra and other western states. In the eastern region sesame is normally sown after the potato crop with mild doses of fertilizers. Not much irrigation is required.

The total global production of sesame seed sums up to around 30 lakh tons annually, China being the highest seed producer. The production as well as consumption of sesame seeds has been in the up trend since the last decade and both the figures are rising steadily.

Sesame seed oil has been used as healing oil for thousands of years. Sesame oil is mentioned in the Vedas as excellent for humans. It is naturally antibacterial for common skin pathogens, naturally antiviral and a natural anti inflammatory agent.

In recent experiments in Holland by Ayurvedic physicians, the oil has been used in the treatment of several chronic disease processes, including hepatitis, diabetes and migraines.

Product Characteristics

Sesame seed contains a high percentage of oil (ca 55%), which has a very good stability due to the presence of natural anti-oxidants.There are three types of sesame seed, depending on the colour of the seeds, namely: white, brown and black. The white-seeded varieties have higher oil content than their black-seeded counterpart.
