Sesame seed contains a high percentage of oil (ca 55%), which has a very good stability due to the presence of natural anti-oxidants.There are three types of sesame seed, depending on the colour of the seeds, namely: white, brown and black. The white-seeded varieties have higher oil content than their black-seeded counterpart.
White Seeds
The colour of the testa of these seeds ranges from cream to white. These are grown in Uttar Pradesh, Madhya Pradesh, Rajasthan, Maharashtra,
Punjab and Andhra Pradesh. Another type of white seeds with distinctive characteristics of the oil is also grown in some areas of Assam, West Bengal
and Tripura.

Sesame seed consist of whole dried seed from the plant Sesamum indicum L. The colour is whitish. Odour and taste are typical, product specific. Free from foregn odour and taste, such as mustiness or rancidity.

nutritious mayonnaise substitute may be made by simply blending sesame seeds with water.
Black Seeds

Rajasthan, Maharashtra and Andhra Pradesh.

The black sesame seed is less common and has a more concentrated flavor than other sesame seeds. Black sesame seeds are especially good on salmon
